Grello

Grello has been able to preserve its original structure as a castle-fortress, the bastion of Grello having been used since the first century A.D. as a refuge by the same Peoples who inhabited the surrounding plain in case of danger.

The medieval village, included in the municipality of Gualdo Tadino, stands on the apex of a hill called Colle del Cavaliere. Grello has an undoubtedly impressive position, dominating the Rasina valley; a true belvedere that, in every historical era, has assumed prominent strategic importance. The castle was erected before 1000. It was destroyed and burned by Nicolò Piccinino in 1435, only to be rebuilt with even more defenses. In the mid-17th century, it was one of the four most important castles in the territory of Gualdo Tadino.

On the night of June 23-24 in the hamlet of Grello, the "night of fire" takes place, in which fire bearers will run with burning tapers around the walls of the ancient castle and through the village, on foot and on sleds, reviving the wonders of the Middle Ages in a single night and allowing people to enjoy genuine, traditional foods.

Dating back to the first centuries A.D. are the ancient writings that testify to the production in this locality of a cheese made exclusively from sheep's milk, which was then put to mature in the more classic canestrate molds. With this typical cheese, still produced today, a typical recipe can be prepared: herb cake with Grello cheese.

Ingredients:

For the dough:

      • 500 gr. of Flour "00"
      • 100 ml. of Oil
      • 200 ml. of Carbonated Mineral Water.

For the filling:

      • 500 gr. of Wild Field Herbs,
      • 1 Onion,
      • 3 Fresh Eggs,
      • 100 gr. of Grello pecorino cheese shavings.
      • Salt and Pepper to taste.

Procedure:

Gather the flour into a well and add the pinch of salt, oil and sparkling water. Then knead vigorously until you obtain a homogeneous mixture with which you will form a ball, which you will wrap in plastic wrap and let rest for 30 minutes at room temperature. While the dough rests, prepare the mixture for the filling. Wash and cut the herbs into strips and brown them in a pan with garlic and a drizzle of oil, letting them wilt for a few minutes. After the dough has rested, roll it out with a rolling pin to a thickness of 2-3 mm. Grease the mold you have chosen to bake the pie and line the baking pan with the savory dough and with a fork pierce the base. Now, in a bowl, pour the ricotta cheese to which you will add the Grello pecorino cheese, eggs, salt and pepper and mix everything together, then pour the mixture into the baking dish and level the dough, finally fold inward the edges of the dough, so as to create the frame, then garnish with decorations as desired and bake in the oven at 180° for 35-40 minutes. When the baking is done, let the "herb cake with Grello cheese" cool to room temperature.
